Cosmic Brownie Cookie

 

These are a copycat recipe from Crumbl.

Zoe loves a Lil Debbie Cosmic Brownie. That’s probably why I had the candies in my pantry.

The new thing I learned with these cookies is to take a cutter that is bigger than the baked cookie (or any round cup) and swirl it around the cookie when they are hot out of the oven, to get a consistent looking round cookie.

Cosmic Brownies 

270g all purpose flour

50g cocoa powder

2 tsp baking powder

1/4 teaspoon kosher salt

228g butter, room temperature

450g semi sweet chocolate chips 

4 large egg at room temperature

365g brown sugar

200g granulated sugar

2 teaspoon vanilla extract

For the chocolate ganache

340g semi sweet chocolate chips good quality

120g heavy cream

Candy coated chocolate pieces

Preheat oven 350. 

Sift the dry ingredients together. 

Melt the butter and chocolate chips on low, cool slightly. 

Beat the eggs, sugars and vanilla together until light in color and the sugar is dissolved. 

Into the sugar add the flour and chocolate/butter mixture. Stir until well combined. 

Using a blue scoop make 20 cookies. 

Bake 14-16 minutes. Until there isn’t a shine in the center of the cookie. 

When the cookies come out of the oven, while they are still hot, take a cookie cutter and swirl it around the cookie to even the sides and make a uniformed looking disc. Flatten the top of the cookie with the bottom of a cup too. 

Make the ganache by heating the cream in a pot on the stove. Once near boiling, turn off the heat,  drop in the chocolate chips, and swirl the pan to cover the chocolate with hot cream. Let sit for 3 minutes then whisk to combine. 

Top each cookie with a purple scoop of ganache. Spread with a small offset spatula and top with candy coated chocolate pieces.
