Banana Coconut Cookies

 

These have coconut, bananas, maple, oats, walnuts and milk powder. Super yum.

I love everything about a soft oatmeal cookie and a banana coconut situation. Topped with a walnut? Right on.

Banana Coconut Cookies

114g butter, room temperature

150g sugar

100g maple syrup

1 egg

1 teaspoon vanilla extract

25g powdered milk

160g coconut-unsweetened

300g bananas, super ripe

100g AP flour

¼ teaspoon baking soda

½ teaspoon kosher salt

200g old fashioned oats-not quick oats

36 walnuts, that look good


In a bowl of a stand mixer cream the sugar and butter together. Add the maple syrup and combine. Scrape the sides. 

Add the egg and vanilla. Mix to combine then add the milk powder. 

Add the coconut and bananas. Mix until blended. 


Sift the soda and salt into the flour then add that mixture and the oats  into the wet mixture. Scrape the sides and let the mixture stand on the counter for 10-15 minutes while you preheat the oven to 350 degrees. 


Scoop into 36 cookies on parchment lined sheets and top with the walnut. 

Bake 9-11 minutes. 

Cool on a wire rack.
