Dutch Baby for my Baby

My wife loves these things whenever we’re at a restaurant with a Dutch Baby on the menu and we have the time she orders one. They say to expect to wait 45 minutes. IRL they are in the oven 20 minutes, so not as quick as a pan of scrambled eggs but not three quarters of an hour.

to make 2-7 inch Babies

Preheat oven 400 degrees

4 teaspoons butter

4 eggs

1 cup milk, warmed

1 cup flour

2 teaspoons sugar

1 tablespoon vanilla

How I do:

While the oven preheats divide the butter in the 2 skillets. Place in the oven to get hot. In a 4 cup measure heat the milk in the microwave. To it add the remaining ingredients. Whirl with an immersion blender. Once the oven is to temperature swirl the butter carefully in the hot skillets and quick as you can pour in half the egg mixture per skillet and close the oven. Set timer for 18 minutes and turn on the oven light. They are cool to watch grow. At 18 minutes check that the middles are set and the edges are browning. The middles may still look wet due to melted butter but all the egg should be cooked.
remove from the oven and top with butter, fresh lemon juice and powdered sugar. They will deflate quickly but they are delicious.
