Polish Walnut Roll

I'm on the new quest to figure out the Polish Nut Roll. This one comes from an old book a Polish friend sent me. This one has margarine and vinegar. I thought there would be cinnamon.  

DOUGH

5 cups flour

.5 cup sugar

1 pound margarine

4 eggs yolks

1 cup milk

2 ounces fresh yeast (10tsp dry) 

1 tablespoon vinegar

FILLING

4 egg whites

1 cup sugar

2 teaspoon lemon juisw

1 pound ground walnuts

1 egg white to wash

this takes two days. For the dough mix flour and sugar together. Rub margarine into the flour. Mix the yolks with half the milk. Mix yeast with the other half of the milk, warmed. Kneed the dough. Add the vinegar and knead an additional few minutes. Grease a bowl, wrap the dough and refrigerate overnight.  

For the filling: Beat the egg whites adding the sugar a few tablespoons at a time until, whip until firm peaks are formed. Add lemon juice. Mix the nuts in by hand. 

devide the dough into 5 portions. Roll into a rectangle, spreads with filling. Roll, tucking in the edges. Don't roll too tightly. Brush with egg wash. Bake 375 for 40 minutes.
